This is a recipe I modified from my friend Rose's response to my FB query: "Does anyone know what in the heck to do with kale?"
You need a food dehydrator for this to get the right crispiness.
1 - 2 bunches kale
3/4 Cup Tahini
1/4 Cup Lemon Juice
1/4 Cup Vinegar
1/4 Cup Tamari Soyua Sauce
2 Finely Chopped Scallions
1/4 Cup Parmesan Cheese
1 1/2 Cup Water
Wash and remove the spines from the kale leaves, then tear and spin dry. Place in a large bowl
Mix all other ingredients together into a pastre and oour over. Massage paste into kale leaves, then lay leaves in single layers on dehydrator racks, and dehudrate till dry.
These store well, last quite a qhile, and make a great travel snack.
